For the foreseeable future, social distancing will remain on the menu for the restaurant trade. The challenge this presents for sit-down establishments who want to create superlative experiences for diners while adhering to health and safety regulations, calls for innovative thinking. Nando’s Design Programme Creative Director and the founder of Studio Lee Lynch, Tracy Lynch perceived that social distancing requirements presented an opportunity to engage with designers to find solutions. So, at the start of the global Coronavirus lockdowns in 2020, she started working on a series of screens and furniture accessories that would not only serve to make social distancing a bit more intuitive, but would also provide as enriching an aesthetic experience as possible. These designs were included in the Nando’s Portal to Africa – https://bepartofmore.com/public/products – and made available to purchase by over 2 500 Nando’s restaurants across the globe. Over the past five years, together with Nando’s Property Director, Michael Spinks, and with the full support of Nando’s, Lynch and her team developed the Portal to Africa as an online marketplace that connects South African designer-makers to interior designers working on Nando’s restaurants around the world. Thus far, the project has been incredibly well received in the [...]

Summer is here – and Origins’ Executive Chef, Tronette Dippenaar, is proud to present the restaurant’s comprehensive, fresh new menu for the season. Look out for traditional favourites with an Asian twist in the airy, modern restaurant, which boasts unobstructed views of Walker Bay. With cliff-walks almost obligatory in Hermanus, you can afford to indulge in the generous fare on offer in this laid-back venue. Choose from a huge range of starters and salads to kick off your meal – try the traditional bouillabaisse seafood soup, fragrant steamed mussels, poke bowls with Norwegian salmon and South Atlantic tuna, and the signature Origins Salad: pears, Overberg Gruberg cheese, walnuts, celery, bacon bits and croutons dressed in whole grain mustard vinaigrette. The wild mushroom and broccoli potato gnocchi, served with Parmesan, mushroom cream and pine nuts, is an option for vegetarians. Main courses serve up some delectable concoctions: try the grilled Springbok loin with creamy Parmesan risotto, wild mushrooms, pearl onions, red cabbage and sultana chutney; the tender roasted Overberg rack of lamb with capsicum couscous, aubergine purée, pearly onions and warm lamb vinaigrette; or the justifiably famous Walker Bay fish curry – locally sourced fish and shellfish seasoned with Thai spices, [...]

Renowned South African fine dining establishment Greenhouse has once again demonstrated its preeminence by being featured on the exciting new 50 Best Discovery list by The World’s 50 Best Restaurants, www.theworlds50best.com/discovery. The venues featured on the 50 Best Discovery list – a global map of the best places to eat and drink – have been voted for by the same industry experts who put together all the 50 Best lists on the website, which serves as a barometer for global gastronomic trends. The 50 Best Discovery hotlist was revealed late in November 2019 and allows patrons to search by city for recommended gourmet restaurants across the globe. Greenhouse has won a number of industry accolades this year – it has just been named as one of only 12 South African restaurants on La Liste 2020, the world’s best restaurant selection based on the compilation of hundreds of guidebooks and millions of online reviews. It also placed in 15th position at the Eat Out Mercedes-Benz Restaurant Awards on 17 November 2019. It has been honoured at the awards every year since 2009, having been named Restaurant of the Year 2011 and 4th best restaurant in South Africa in both 2013 and [...]

The Hussar Grill’s deliciously sweet and tangy Pear, Blue Cheese and Walnut Salad sets a sophisticated tone this summer. An upmarket twist on the summer salad theme, this more-ish dish can be enjoyed as a meal in its own right or as part of a tasty feast – the recipe was specially developed by The Hussar Grill to satisfy both patrons who prefer something light and those seeking a delicious accompaniment to their main meal. The sweet caramelised pears in this salad complement red onions and tomatoes and off-set the distinctly piquant blue cheese. The walnuts and roasted seeds add a nutty, toasty flavour, while the cucumbers and lettuce add crisp freshness to the dish. Why not pop in at your local Hussar Grill and try this winning salad here first before making it at home? Then head back to your kitchen to prepare it for your next lunch or dinner party! Ingredients Caramelised Pears Make a batch (1kg) of caramelised pears and store them in the fridge in a large glass jar for another day’s meal as you won’t need the whole batch for one salad. 1kg Pears, cleaned and cores removed 400g Castor sugar 400ml Boiling [...]

Birkenstock, established in 1774 in Germany, is a world-renowned brand that has taken the world by storm with its ground-breaking footwear. Much like the iconic global brand Luke Dale Roberts, founder and creative genius behind The Test Kitchen restaurant, has stood the test of time and thus completed the beauty of a partnership between two strong likeminded brands. What makes Birkenstock stand out from the crowd is its innovative foot bed, an anatomically shaped insole that has special support characteristics. The construction, which has been thought out to the smallest detail, makes it feel like you’re standing in sand when wearing the shoes. Your feet feel comfortable for hours on end while relieving pressure from walking. The exceptionally sophisticated version of the Boston clog, a classic Birkenstock model is now the shoe of choice for renowned chef, Luke Dale Roberts and his team. “You spend a lot of hours on your feet when you work in the kitchen and you need to have a shoe that breathes and offers you proper support,” explains Roberts. What is also great about the clog is its adjustable strap and the fact that it comes in two different sizes, notably regular fit and narrow [...]

Glamorous new hotel Labotessa on Cape Town’s heritage Church Square has just opened to the public, along with a brand-new outlet of Claremont “café crush”, Starlings. Labotessa, an elegant seven-suite space within a charming historical envelope, embodies the essence of what a boutique hotel ought to be – intimate, considered and personal. Starlings matches this locale in both personality and panache and is set to become the city’s new go-to for a quick brekkie for the early birds or a lengthy lunch looking out on the “piazza”… Given the hotel’s prime position in the CBD – close to a multitude of cafes, restaurants and bars – and considering the fact that guests (both local and international, business and leisure) would want to explore the area during their stay, the duo decided to offer a pulled-back dining element in favour of suites that allowed for in-room snacking, and an inhouse restaurant that catered to a daily neighbourhood crowd as well as hotel guests. Most importantly, they wanted to focus on a level of quality in line with the hotel’s beautiful interiors and service standards. Du Plessis’ vision for how guests would use and experience the space included casual dining that had [...]

Barry Salzman is an award-winning contemporary artist who currently works in photography, video and mixed media. His projects have been shown across the globe and his work widely published. He is the recipient of the 2018 International Photographer of the Year award in the Deeper Perspective category of the International Photography Awards (IPA), for a project entitled The Day I Became Another Genocide Victim that addresses the Rwandan genocide. Salzman’s latest exhibition The Other Side of Christmas will be shown at Deepest Darkest art gallery in Cape Town, South Africa from 7 November to 28 December 2019. This substantial body of work documents everyday scenes across the American South between the 2014 USA mid-term elections, the precursor to the divisive 2016 Presidential elections, and Christmas. It is Salzman’s personal exploration of what it means to be ‘American’. “The work is a critique of the American Dream. It’s my personal analysis of what I saw and experienced, but is in no way intended to present a factually comprehensive analysis. However, the American Dream was predicated on a certain ethos – democracy, liberty, equality, opportunity. In order for its historical notion to prevail, you need a sense of economic prosperity and upward [...]

Do you know why you should let steak “rest” before you cut it? Or the difference between “blue” and “rare”? To reveal the answers to these questions along with other secrets of the steak, South Africa’s premier grill room, The Hussar Grill, will be sharing some of the expertise behind its successful 55-year legacy in a series of Steak Masterclasses. Aspirant cooks and foodies are welcome to attend these stand-alone evening events, which will be held in a professional kitchen at the prestigious Silwood School of Cookery in Cape Town, South Africa’s oldest cookery school. The idea to host the Steak Masterclass series was conceived in 2014, in honour of The Hussar Grill and Silwood School of Cookery’s 50-year milestone. Today, each Steak Masterclass is hosted by Jason Allen, the owner of The Hussar Grill restaurant in Steenberg, and cover the preparation of three choice cuts of beef, namely, sirloin, rump and fillet. For those not yet in the know, sirloin and fillet can be cooked quickly and served very rare, while rump – South Africa’s most popular steak – can be fried or grilled more slowly. In addition to learning how to grill a steak to the rare or [...]
