		<description><![CDATA[Hermanus is spoilt for choice when it comes to eating out – as you might expect from a popular holiday destination. A plethora of watering holes, takeaways, concessions and sea-view restaurants hug the clifftop above the old harbour. There’s a restaurant in pretty much every direction you look – and unlike the elusiveness and wonder of whale-spotting, here you are at least guaranteed sight of a waitron without it being a total fluke.  While there is a host of refreshment stations, many of these are merely middle of the road franchises that simply find themselves opportunistically located in Hermanus. And there’s nothing wrong with that at all. It’s certainly convenient for a wide range of palates and pockets. 		<description><![CDATA[Don’t underestimate the restorative powers of The Marine. One of the oldest buildings in Hermanus, The Marine was originally founded as a healing sanatorium where guests could benefit from the rejuvenating power of the sometimes bracing sometimes balmy sea air. Doctors have been recommending trips to the shore for “bathing holidays” since the 18th century. It follows that The Marine was first built around this time, so that visitors could get suitably drunk on Hermanus’ famed “Champagne Air”. The sanatorium graduated to a hotel in 1902. The medical dictates of days-gone-by have been borne out by modern scientists, who have ably demonstrated how waves charge the frail bodies of us mere mortals with all sorts of negative ions that do indeed promote good health. But it certainly won’t take a doctor or scientist to tell you you’re in the right place once you arrive at The Marine. 		<description><![CDATA[Tronette Dippenaar, Head Chef at The Marine in Hermanus, oversees the popular Origins restaurant as well as breakfast venue The Pavilion. Her charismatic and energetic approach to food and service, and her leadership skills have been an asset to the hotel’s culinary offering since she joined the group in 2008. In her 10 years with The Liz McGrath Collection, she’s worked at all three of the hotels, and has now returned to where she started at a Chef de Partie in 2008. She later transferred to The Plettenberg hotel on the Garden Route, where she was promoted to Head Chef, and then on to her third hotel in the group, Cellars-Hohenort. Her next venture was overseeing the culinary offering of the Lord Milner hotel in the tiny historic town of Matjiesfontein. She was there for three years before coming full circle back to Hermanus and to The Marine as Head Chef in 2017. Tronette grew up on a farm in Robertson and attended Tygerberg Hotel School before embarking on her culinary career at The Aghulas Country Lodge.
