Harvest of the grapes used for the Sketchbook Merlot takes place in the early hours of the morning, and the 14-year-old vineyard yields on average eight tons per hectare. The Merlot grapes from the high-density vineyard are hand-picked with the six-wire trellising system being employed, resulting in a meticulous viticulture practice, including bunch-halving and intense canopy management. Only the finest hand-selected grapes are fermented in French oak casks that accommodate 300 litres each. The result is a wine with deep structure and firmer, finer-grained tannins, ideal for cellaring purposes.
The Carrol Boyes Wines 2016 Sketchbook Merlot is a rich and concentrated wine with aromatic layers that include coconut, clove, black cherry, chocolate and cinnamon.
