Carrol Boyes Wines showcases its 2016 Sketchbook Merlot this winter

Harvest of the grapes used for the Sketchbook Merlot takes place in the early hours of the morning, and the 14-year-old vineyard yields on average eight tons per hectare. The Merlot grapes from the high-density vineyard are hand-picked with the six-wire trellising system being employed, resulting in a meticulous viticulture practice, including bunch-halving and intense canopy management. Only the finest hand-selected grapes are fermented in French oak casks that accommodate 300 litres each. The result is a wine with deep structure and firmer, finer-grained tannins, ideal for cellaring purposes.

The Carrol Boyes Wines 2016 Sketchbook Merlot is a rich and concentrated wine with aromatic layers that include coconut, clove, black cherry, chocolate and cinnamon. Cherry and plum elements carry a long finish, with light notes of oak toffee that can be paired with charcuterie platters or a hearty pasta dish. A light Merlot is also often matched with Mediterranean vegetables and an ideal choice for vegetarian-inspired meals.
